Serves 4


1 mango, diced
1 avocado, diced
¼ cup cilantro, chopped
1 lime, juiced
1 pound uncooked shrimp, peeled and deveined
1 tablespoon Extra Virgin olive oil

1 tablespoon Old Bay seasoning
1-1½ tablespoons crème fraiche
Micro greens or edible flowers


Season the shrimp with the seafood rub and saute in oil over medium-high heat, about 2 minutes per side turning only once, remove and set aside. Mix together remaining ingredients, except for the crème fraiche and micro greens. Spread the crème fraiche on the middle of a small plate and scoop a ¼ cup of the mango/avocado mix on top.  Place the shrimp on top and garnish with micro greens or edible flowers. Pour a glass of “The Author” and enjoy!!
